CRAFT ICED TEA

SUMMER IS HERE!

As the temperatures soar, we got creative at the No. 3 Clive Road HQ. This week we experimented with our own home-brewed craft iced teas. Here's a recipe that will make you say goodbye to any pre-mixed flavoured iced tea you have ever tried!

// Minty Sweet Lime Craft Iced Tea //

Ingredients:

2 pealed, sliced and crushed sweet lime
6 fresh mint leaves
4 cups filtered water
3 Tbsp No. 3 Clive Road Nilgiri Classic

Instructions:

*Place the crushed sweet lime, mint and Nilgiri black tea in a pitcher full of room temperature water.
*Leave your pitcher in a fridge overnight.
*Strain the ingredients next morning.
*Add a touch of honey or brown sugar to taste.
*Serve in a glass full of ice and garnish with candied sweet lemon slices.

// Candied Sweet Lime Peel //

1 sweet lime
1 cup granulated sugar, plus additional for rolling
1 cup water

*Using a sharp paring knife, slice along the curve of each citrus fruit from top to bottom cutting through the peel but not into the fruit. Use your fingers to remove the peel from the fruit.
*Cut each piece of peel lengthwise into 1/4-inch-wide strips.
*Place the sliced peel in a saucepan and cover with cold water.
*Bring the water to the boil and then drain. This removes bitterness from the peel. Repeat this process three times.
*Place the sugar in a saucepan and add 1 cup of water. Bring to the boil.
*Add the peels, reduce heat and cook at a gentle simmer, stirring occasionally, until the peels are soft, 45 minutes.
*Use a slotted spoon to transfer the strips of peel to a cooling rack set over a pan.
*When dry, roll in granulated sugar.

Store in an airtight container for up to 3 weeks.
